To day, the vineyards spread over some 31 parishes. The area is dry mountainous and very sunny.
Clairette de Die « Tradition » is a wine with a long history. Pline the Elder spoke in his « natural history » of a sparkling wine, know as « aigleucos ». This was the ancestor of the Clairette de Die. It is produced using with two grape varieties : small-berried, tightly clustered golden muscat, clairette. After pressing, the grape juice is fitered and cooled. The must is then bottled, and the fermentation continues to produce a naturally sparkling sweet wine, no sugar is added. This unique process is know as the Anscestral Diois method. It can be enjoyed on all occasions.
Crémant de Die is a dry sparkling wine made exclusively from clairette grapes. In the methode Traditionelle, a first fermentation after pressing is followed by bottling. The addition of a liqueur at this stage stimulate the second fermentation. As an aperitif and throughout the meal ; it is ideal for all celebrations and special occasions.
Côteau de Die enjoyed locally for many a long year. It is still dry white produced from clairette grapes. It is perfect accompaniment for starters and seafood dishes.
